Each year the small historic market town of Market Drayton located in north Shropshire holds its annual Ginger and Spice Festival to celebrate all things Ginger & Spice. The festival Italians different areas of Market Drayton with the iconic Cheshire street being flooded with Artisan Market stalls and an fleet of canal boats to form the floating market on the canal.
2023 was no acceptation to this with the spicy artisan market being fully booked creating a hive of activity along with the abundance of spectators watching the skilled professionals demonstrations at the James du pavey food theatre not to mention the brilliant children’s activities and the superb floating market.
James du pavey food theatre was a once again a sensational success. With professionals demonstrating to by standers what they do best and incorporating the history of local food and ginger & spice.
But the Crème de la crème had to be the 11 o’clock show with Dan Smith from The Pastry Box Shropshire and Scott Shepley from Shepleys Butchers who created Clive Pies.
The Clive of India who was born at Styche Hall which is just 5 minutes from Market Drayton brought the recipe from India. The sensational little pies are usually served with wine.
Scott and Dan created the pies by boning out a leg of mutton which was then finely sliced and added to a mixture of ingredients such as cumin, henderson's relish and curry powder. And then carefully filled up the beautifully crafted hot water crust pastry bases before cooking them to perfection.
